Applesauce Muffins

My family and I have some amazing muffins that we love.  When I started Mutu I really looked at the recipe and realized how unhealthy they were.  And they were really bad.  I started to play around with them to cut the butter, cut the sugar, and add some fiber.

This is the results.

Applesauce Muffins

  • Servings: 12
  • Difficulty: easy

1/3 Cup butter
1/4 C Honey (or 1/2 cup sugar or 6 T maple syrup)
1 egg
1 t vanilla
2 Cups Applesauce
1 Cup White Whole Wheat Flour
1 Cup oatmeal flour
1/2 teaspoon baking soda
1 T ground cinnamon
1/8 – 1/4 C flax seed, wheat germ or other mix in
1/4 – 1/2 C raisins
Cream butter and sugar together.
Add egg and beat.
Add vanilla and applesauce.
Mix in flours, baking soda, and cinnamon.
Fold in raisins.
Grease muffin tins.  Divide batter into the 12 tins.
Bake at 350 degrees for 20 minutes.
They are finished when a tester comes out clean.
Note: You may choose to use all whole wheat flour instead of oat.
